This conference room is just for members, and not the public, corrrect? If so, another alternative is to rent out a penthouse suite, and then invite "guests".
Yes, no 1000$ tacos, but in vegas, you shouldnt have to spend much on food anyway. order pizza instead? Or go to the casino, stuff yourself, then go to the suite.

No annoying executives telling you how to run the room, or charging extra fees.
Need tables? Drag them in from the other guests rooms, or bring in a few cardboard tables.
